One of my favorite parts of summer is all the fresh fruits and veggies growing in my backyard and being sold at farmers markets throughout the area. One of my favorite summer harvest treats is sweet corn. I love biting into a juicy cob of sweet corn during a summer barbecue. Whether boiled or grilled, corn on the cob will always be a summertime dinner staple for me.

Lately I’ve been intrigued by Mexican street corn, called elote. Slathered in mayo and sour cream and garnished with chili powder, fresh lime juice, cheese and cilantro, I thought it would be fun to pull together some fun twists on this delicious side dish. And, while I was researching, I thought I might as well search other Mexican side dishes and desserts, too. Here are a few of my favorites. Sweet corn favorites

Mexican street corn is a great summertime barbecue side, but sometimes eating a slathered corn on the cob can be messy, especially for little ones. Good thing you can take those same delicious ingredients and create a delicious side dish. Slice that corn off the cob and toss it with the mayo and sour cream mixture and add in cotija cheese, chili powder, lime juice and cilantro. You can even add some additional ingredients.

Chunks of avocado, black beans and halved grape tomatoes can be added to that corn mixture for an even stronger flavor punch. You can also add jalapeños for an even bigger kick. In addition to the cotija cheese, add a shredded Mexican blend of cheeses for a creamy twist. Another idea is to create a creamy corn cake. Top the slightly sweet cake with sour cream, salsa and lime for a new take on cornbread.

Sassy sides and salads

When it’s Taco Tuesday and your family is tired of the same side of chips and salsa, it’s time to add a new recipe to your weekly menu. Instead of boxed Mexican rice, why not make up some delicious cilantro lime rice. You could even create a homemade queso bean dip your family will rave over. Add a little Mexican flair to your typical garden salad by adding a spicy jalapeño ranch dressing
